There is one thing which I have to admit, which is my struggle to eat healthily. You know how sometimes when we have so many temptations to eat junk foods – extremely unhealthy but taste good food where we just couldn’t resist but eat it anyway despite knowing how bad it is to our body. After that, we will immediately regret our decision and feel guilty for the rest of the day lol.
Hence, to reduce my guilt, I would prepare a quick, simple, healthy and delicious salad.You know how some salads tend to taste very bland, making your overall experiences of eating a meal bad and disappointing. But this particular salad – Curry Chicken Salad are one of my favorites! Yes, you may be thinking ‘Ewww, curry with chicken in a salad?!’. Yes, correct. Curry Chicken IN a salad with other toppings as well. Don’t be alarmed by its name, it really is delicious, and of course healthy as well.
As a Malaysian, curry chicken is one of our national food. Instead of using the usual thousand island sauce, mayonnaise, sesame sauce and etc which are fattening, I tried to be creative with my food by adding some curry powder to the yogurt which surprisingly goes really well together, making it rich and flavourful. Now, let us get straight to the ingredients and preparations needed to make this salad!
Ingredient for 2 serving :
- Bunch of fresh lettuce
- 5-6 cherry tomatoes
- 8-10 seedless grapes
- 1 cup walnut
- 1 1/2 cup chicken breast
- 1 cup low-fat yogurt
- 2 teaspoon curry powder
- Rinse the lettuce, cherry tomatoes, and grapes and set aside.
- Cut the chicken breast into slices and boil for approximately 5-6 minutes.
- Salad Sauce- mix the curry powder and low-fat yogurt well
- Lastly, Mix the salad sauce with the ingredients and you can serve immediately !
This sauce mixture is perfect to serve with the salad as it is both delicious and healthy as it contains proteins and different kind of vitamins, and most importantly, it is also low in calories. According to the Chinese prophecy, by consuming chicken it is said to be nourishing to the body and provides extra energy. Whereas according to the Westerners point of view, chicken serves as a great source of protein. Did you know that curry is a wonderful healing herb and spices, yes you got me right ! Curry helps to regulate blood sugar and manage cholesterol, hence serving as an agent for anticancer properties too.
Basically, the preparation time for this salad is extremely short where you can serve it in within 10 minutes. For those of you who are craving for some junk foods while watching your favorite drama, or feeling all stressed up doing assignments or studying, this is a perfect alternative which you can enjoy!
