Egg Muffins

Good morning lovelies! Today’s theme will be eggs! Every time when the word “eggs” come across my mind, I am reminded of Humpty Dumpty (lol, childhood memories). Anyway, back to the topic. How many of you love eating eggs? If you do, do you eat both the white and the yolk? or do you always leave out the yolk or pass it over to your family members or friends?  The reason for me asking was because there is a friend of mine who told me that she loves eating eggs, but always leave the yolk to the people sitting next to her. I thought well, maybe she dislikes the taste of an egg yolk. But no, she told me that she had a bad childhood experience where she nearly got choked by an egg yolk because it was too dry and it got stuck in her throat. (wow, I guess we got to really be careful in eating our yolks!)

Anyway, how do you like your eggs prepared? As all of you know, eggs can be prepared in many different methods – Sunny side up, omelette, poached, hard and soft scrambled, hard, half or soft-boiled and the list goes on. I believe many of you have eaten those that I have mentioned above before. If yes, which is your personal favourite?

To be honest, I was never a fan of eggs, in fact, I often leave out the eggs whenever I eat a pack of Nasi Lemak or any other dishes (please don’t judge me lol). I remember last year during my birthday, my friend treated me a big breakfast with 2 poached eggs on the toast. But, as expected, I ate the rest of the plate leaving the 2 poached eggs behind. My friend was in shock and asked why? how could I? because a poached egg is considered a quite atas meal to be served in a hipster cafe where people take fancy shots of the eggs or videos to capture how the runny yolk flows out on Instagram or Snapchat. If you ask me since I dislike eggs so much, why do I even thought of posting about eggs?

Well,  that is because today I want to introduce you to what may be my new favourite way to eat eggs. Yes, as you have seen from the glorious egg muffins above, the one which is lightly browned on the outside and soft and fluffy with lots of ingredients inside! (YUMZZZZ). I LOVE LOVE egg muffins! I mean come on, doesn’t it look cute to you?

I got this idea to do these egg muffins after reading up some recipes on All Recipes  and noticed how pretty it looks and realised that I could make it healthy by adding all my favourite vegetables in it. Let me take you further by explaining to you the ingredients needed and how is it prepared!

Ingredients for 6 egg muffins :

  • 2 medium eggs
  • 1/3 cups of low-fat milk
  • 1 tablespoon of garlic
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of dried oregano
  • 1 slice of chicken ham
  • 1/3 cups of tomato
  • 1/3 cups of cucumber
  • 1/3 cups of carrots
  • 1/3 cups of onions

Directions :

  1. Chop and slice the garlic, chicken ham, tomato, cucumber, carrots, and onions into small cubes.
  2. Fry all the ingredients
  3. In a mixing bowl, add the eggs, milk, salt, black pepper, dried oregano, and all the ingredients cooked in the frying pan and mix until combined.
  4. Grease your muffin trays with olive oil/ vegetable oil or cooking spray and pour in the egg mixture
  5. Put into the oven for 350-degree celsius for 10-15 minutes

Doesn’t these looks good in your eyes? Well, at least it does to me.Besides, there are many things to love about preparing egg muffins! Firstly, it is easy to prepare. Secondly, you can add any of your favourite ingredients in it (of course not anything sweet like chocolate, candy, etc). Thirdly, it is tiny and cute where you can put these onto a muffin/cupcake liners and put in your lunchbox to bring to your university and trust me, you will totally be a crowd pleasure! and lastly, if you were to serve these to the kids, I bet they will bug you for more! (P/s : you can hide all the vegetables in it and they wouldn’t notice hehe) 

Most importantly, it is healthy! Egg contains nutrient, mineral, protein with omega 3 fats, vitamin A,B,D,E and K  and a complete range of amino acid which helps to shape blocks of protein. Besides, eating egg will absolutely keep your stomach feeling fuller for longer. Topping off fresh vegetable choice indefinitely shows that it bring a significant health benefit. Carrot aid in the prevention of a certain type of cancer  as it has powerful antioxidants to reduce free radical in the body such as lung, colorectal and prostate cancer. Whereas cucumber will fight inflammation, freshen your breath and the multiplicity of vitamin B in it helps to manage stress.
